A simple dinner, shared
This #thankyouthursday, I am grateful for a simple dinner, shared.
My partner usually does most of the cooking (which merits a #thankyouthursday post of its own), but he’s out of town this week. And since we have a kid, I can’t revert to my default mode of grazing on some nuts or a cheese stick and coasting till bedtime.
But I can cook okay, and when I’m responsible for meals, I do all right. Yesterday I even planned ahead of time—meaning I thought about what I was going to make about three minutes before preschool pickup, but, still, I came up with an option and verified I had the ingredients.
And then during the drive, my neighbor texted about a possible dinner hang. Her partner and kids weren’t around for the evening, and usually I’d be like, ummmm, sure but what will we eat? But yesterday I was able to easily suggest she come by and join B and me, and she did, and it was so nice.
All did was boil some pasta and toss it with some pesto sauce and seasoned chicken and olives and feta, and for a salad I chopped up some romaine lettuce and a little cucumber and splashed it with some Italian dressing. It was so simple. But it was incredibly satisfying to be able to share the meal with my friend, to give her one less thing to think about.
Because we’ve all got a lot going on, but we’ve also all got to eat. So much the better if we can do it together.
